Buiyng Reindeer Meat
When buying reindeer meat, it is good to check whether the meat is from a grown reindeer or a calve, as well as where it originates. The markings in the packages should tell the origin. Protected Designation of Origin (PDO) products and Hyvää Suomesta –products are always from Finland.
The meat of the reindeer calve cooks quicker and is mild in its flavour. Since the pieces of meat are smaller, the meat is particularly tender.
The reindeer meat sold in Finland is mostly calve meat. And most of the time the meat is frozen, because reindeer are slaughtered in the autumn or early winter. It is good to melt it slowly in cool space before cooking.
